This is my recipe for battering and frying my own fresh fish fillets. If you are going to be fishing for bass, trout, pike, walleye, perch, crappie, salmon, steelhead or some other tasty fish, you will need to know how to make your own homemade fish and chips. You can use about anything to make the fish batter. I generally take any old or stale bread, chips, crackers, corn meal, flour and throw it in the blender with salt, garlic, onion, herbs and other spices. My fish batter tastes different everytime. It just depends what I have on hand. Salt and vinegar chips work well with bread and spices. Once I have the fish batter made, I put it on a plate. Then take some eggs and whip them up in a bowl wide enough to dunk your fish fillets in it. At this point get your pan hot. Around 350 degrees. I like to use organic coconut oil to fry my fresh fish fillets. It is a sweet grease and is healthier than most other choices. Olive oil, real butter or bacon grease would be my next choices. Dunk your fish fillets in the egg. Once the fish fillet is fully covered in egg, dunk it in the bread batter. Your fillet should be completely covered with your homemade fish batter. Now drop the fish in the pan and cook it for 5-7 minutes on each side. The fish batter should be nicely browned. Don't cook it too hot or the batter will be done before the fish. Now dunk them in my homemade tartar sauce. This is a tasy dinner for sure.
